Super Fast Tex-Mex Salsa, Bean, and Corn Soup

A.K.A The absolute best thing to come from leftover homemade salsa
I wanted to share my favorite fast recipe for when you have leftover homemade salsa. Please make this salsa, eat it fresh for a couple of days, and then make this knock-out soup. It's ready in ten minutes, and it's so yummy and healthful and spicy and can change the world and you gotta have it in your fast dinner repertoire. Now I'm running out of breath from all that gushing. I even have a funny and embarrassing story about this soup, but you'll have to pick it up on my last blog project. Super Fast Tex-Mex Salsa, Bean, and Corn Soup
Estimated Cost: $2.50
Notes: My preferred way to make this soup is with the S and W brand chili beans with chipotle, but any brand will work well. Don't mistake them for chili; chili beans are canned pinto beans in a spicy tomato sauce. They're a real time saver!

1 cup leftover smooth salsa
1 (14 ounce) can low sodium chicken or vegetable broth
1 (14 ounce) can chili style beans, or leftover whole beans and a 1/2 tsp. of chipotle chili powder
1 cup corn, fresh or frozen
For Serving: Tortilla chips, sour cream, cheese (I used feta), avocado, lime wedges, chopped cilantro
Combine the first four ingredients in a medium saucepan. Bring to a boil; reduce heat and simmer for ten minutes. Serve with any of the above toppings.

I love this soup and the funny and embarassing story! I feel so bad that I was there when it happened, but my life was so difficult with one little tiny well-behaved baby, that I was oblivious. I would have cried! For days! We had this soup tonight, before I even saw it on your blog, and I thought of you and your beautiful hair! Be careful with this batch of leftovers!

Dearest Prudy,
A couple of questions- Can you offer any ideas for vegetarian side dishes to your spiced rubbed chicken, from a few posts back. And for the mini bbq chicken sandwiches, I saw that you recommended a few alternatives to using chicken, would you just prepare the veggies (zuccini or mushrooms) the same as the chicken? Thanks for any help you can offer.

One of my favorite veggie dishes is spice rubbed zuchinni. Rub it with olive oil and sprinkle on the same spices as the chicken. Then grill or broil. I'm going to post that soon...maybe this summer when the zukes are prolific. As for a perfect side dish for the spice rubbed chicken-go for a quick black bean salad.

cMmmmm...that soup looks great! Your blog entry about soup in the hair was a scream - I'm happy that you can laugh about it now but I'm sure you wanted to cry when it happened! I probably would have cancelled on my company and sat down and cried my eyes out. In the shower. Where I would be washing the soup out of my hair!

Just so you can understand my level of neurotic insanity, I have to tell you that before I could shower and get all of that out of my hair, I went on a run. Yes, a good 4 mile run. I had planned to exercise and shower before the company came. I knew if I took a shower, I would skip the exercise. So I ran. With beans and corns and chiles in my hair. It's a good thing that my husband has a sense of humor. It comes in handy.

the soup looks great--only one problem. if i make homemade salsa there are rarely leftovers. my kids and husband just gobble it down. i'll have to make more next time, just so i can try the soup.:)
