No Bake PB and Chocolate Cookies

This week was my first week back as an adjunct professor of Humanities. I teach six credits, two classes that last 3 hours each on Wed. and Thurs. evenings. When I walked through the door on Wed. night, the sweetest surprise was waiting for me. It was from my thoughtful "Young Women," the 16-18 year old girls I teach in my Sunday class. It was such a kind gesture, such a welcome gesture after a long night.
This is how I will repay them today. They don't know it yet.
But this isn't even the recipe that I wanted to share. This is. When I was growing up in California, my siblings and I were allowed to make cookies whenever we wished. There were a lot of cookies rolling through our oven; peanut butter, chocolate chip, sugar-you name it. But there were also a lot of mouths around to eat those cookies, so they didn't last long. One of our favorite quick cookies were no-bake cookies. These are not beautiful cookies, in fact they are rather homely, bumpy and odd. (I'd love to tell you what my brother Roy calls them, but I don't think I should write such things on a food blog.) Don't let their awkward appearance stop you from making them, since they are really very yummy. I love the fudgy peanut buttery flavor together with the hearty oatmeal. They're lightening fast, since they don't even have to bake, which is just perfect for late summer afternoons when you can't be bothered to turn on the ovens. Make a few extra to share. No Bake Chocolate Peanut Butter Cookies
Estimated Cost: $3.00 for 2 dozen
1/2 cup butter
2 cups sugar
1/4 cup cocoa powder
1/2 cup milk
1/2 cup peanut butter
3 and 1/2 cups oatmeal (Old Fashioned or Quick Cooking)
In a medium saucepan, bring butter, sugar, cocoa powder and milk to a boil over medium heat, stirring often. Boil for one minute. Add peanut butter and oats. Drop by rounded teaspoonful on to waxed paper. Let cool to harden.

These are favorite! I grew up with these here in Kentucky. I could eat a whole batch (and sometimes have)!

This is so funny Prudy, I made a batch of these last night :) I was taking them to some of the sisters I visiting teach. I like your recipe with half a stick of butter. Mine calls for a whole stick. Any way to help cut out some of the fat and calories. I'll make that change in my recipe book.

I posted about these a few months ago, as they too, were a favorite cookie of mine growing up. Our recipe was exactly the same, except we only used quick cook oats, and it came out of the Fannie Farmer cookbook. Little did I know, I would some day move to the same town Fannie Farmer grew up in.:)

My mom got this recipe from my grandmother (her mother-in-law). Nana had gotten it from someone else and the recipe card called them "snickerdoodles". I was grown up by the time I realized that the "snickerdoodles" the rest of the world was eating were entirely different from the summertime cookie I grew up with.
P.S. Someone needs to come up with a catchy nickname for these.

These are my absolute FAVORITE of all time cookie! I love how super easy and fast they are to make. AND scraping out the pan at the end...Mmmmm! Now you've got me craving!

I remember making these at your house when Heidi and I were at good old Scott Ave. School! These were an instant favorite. Thanks for sharing your family's version; I haven't like the recipes I found on the internet.

When I make these, my former Cub Scouts from seven years ago, tend to magically show up in my kitchen (my son Quincy obviously has a cell phone and a big mouth) and they're gone in a matter of minutes. When I eat these, I'm oddly transported back to age 11, when my sister first made them for me -- it was a VERY good year...

Well, these were definitely a hit at my house yesterday. I got all domestic and had them made for an afternoon snack after the kids got home. They love it and my husband? I think at a dozen on his own. I wish I could say I loved them, I just didn't try, oatmeal is just not a favorite of mine. I guess it's ok to do something I don't like every once in awhile seeing how they are a piece of cake to make!!

I looove no-bake cookies. One year for Halloween, I dressed up as a cow (a co-worker dressed up as a farmer) and I took no-bakes to work, handed them out as cow patties...

I made these for a work potluck yesterday and they were a hit! My mom made these as I was growing up, but not with peanut butter. The peanut butter was a great addition.

we just made these this afternoon but substituted almond butter (unsalted), doubled the cocoa powder (a happy accident), a couple pinches of kosher salt, and some vanilla. yum.
