Chicken Fettucini Alfredo

This week we put out big toe into our new schedule, just to test the water. Should we jump in or hang out by the shore a little longer? I'm teaching nine credits at the college this semester, homeschooling the charges, and of course, cooking food and writing on my blog. If you throw in exercise, keeping up the house, getting the charges back and forth from ballet, violin, fencing, etc, and staying in touch with my siblings, I'm just about running at maximum. So here's my question for the day: What time do you ideally have to wake up in the morning to make the day run smoothly? I'm not even asking what time you ACTUALLY get up-just what time you would IDEALLY get up to have the day run perfectly. Leave a comment because I really want to know.
OK, now here's a recipe to share for the day. You know by now how much I love using FOOD ON THE TABLE to plan my meals with the grocery store specials. (Have you tried it yet?) A couple of weeks ago, I printed a recipe for Chicken Fettucini Alfredo. I didn't make it exactly as written, so you're getting my adapted version. But just look at all the gorgeous stuff I've got in my skillet. Combined with pasta and a creamy alfredo sauce, it was fantastic. I can't wait to make it another time. Money Saving Tips:
Bell peppers are cheapest right now, so pluck some from your garden or buy a rainbow variety from the Farmer's Market. Pasta dinners are famously cheap, so make an extra batch and freeze it in individul portions for lunch.
Chicken Fettucini Alfredo
Adapted from Food on the Table
Estimated Cost: $8.00 for 6 servings
1 tablespoon olive oil
1 lb. chicken, cut into bite sized pieces
3 cloves garlic, chopped
2 bell peppers, chopped
2 onions, minced
1 cup frozen peas, thawed
4 tablespoons butter
5 tablespoons flour
2 and 1/2 cups milk
1/2 cup cream
1/2 cup parmesan cheese, grated
12 ounces hot cooked linguini
extra parm, for passing
In a large skillet, heat olive oil over medium high heat. Add chicken and cook for five minutes. Add garlic, bell peppers, and onions. Cook until softened; season to taste with salt and pepper and keep warm. In a medium saucepan, melt butter. Whisk in flour. Add milk and cream and cook over low heat until mixture comes to a simmer. Simmer one minute; add parmesan cheese and sason to taste with s and p. Combine hot cooked pasta, chicken mixture, and about half of the sauce. Spoon a little sauce over the top before serving. Sprinkle with extra parm.

When I was teaching and had three young children, I would get up at five each morning, dress and then wake the children who always got a good breakfast, get them to the sitter's when they were small, and when older, I had another cup of coffee before leaving the house with my own teens as we left for school. My children attended high school where I taught, so that worked for me. However, I got up at five in the morning for so long that now I'm retired, I still get up at five each morning. It's a hard habit to break!

  2. It doesn't seem to matter what time I get up, because no one goes to school . . .yet. But on Sunday Mornings of 9:00 church, if I get up at 7:00 we're in pretty good shape. I'm sure I sound like a lazy bum, but all this is about to change in one week.

  4. I only have one child, a 3 year old, but for me, I tend to get more done and my day runs more efficiently when I get up around 5:00-5:30. However, I am pregnant with baby #2 so that doesn't happen very often.
    I am loving "Food on the Table". What a great time saver that is!

  6. I shoot for 6 am. Usually get up within a few minutes of that depending on what else is going on. I feel like I could always use a few more hours each day. Either that or I need to be more efficient. Probably the latter, but a girl still needs to stop and read once in a while, right?

  8. School starts Monday, and I will be up at 6:30 (5:45 if I ever start running again-LOL). Kids up by 7:15-7:30. Out the door by 8:30. I'm getting tired just thinking about it. I haven't had to use my alarm clock in quite sometime now. All Summer, I get up when my babies climb in my bed! That's the BEST!

  9. I'm with Katie. In the summer I get up when my munchkins get in my bed. Today we didn't get up until 9:20...awful, right? Starting next week we will be up at 6:15 everyday, to be to school at 7:30. I know super moms get up hours before the kids to exercise, make lunches, sing with the birds or whatever, but not me. I am better off to stay up getting school clothes/lunches ready while singing with the owls, and then staying in bed until it is time to get kids up.

    BUT whether you need extra time at night or in the morning, ALL moms could use a few extra hours in the day. Good luck with another busy year!

  10. That recipe looks great. And I don't think there is an ideal time to wake up -- the earlier I rise, the more I find to do! However, if I'm not up by 5:30 I'm probably not going to work out -- and I hate to miss that.

  11. I get up at 7am. I get the kids breakfast and then wake them up at 7:10. I only have one in school, she is 6, and pretty independent. While she gets herself ready, I do my 30 minute workout. Then I fix her hair, and we leave the house about 7:50 (school starts at 8:15). Then it's time to come home and feed babies...I get to actually eat my breakfast at about 8:45!!

  12. Oh, and I take my daughter to school in my PJs! I just drop her off at the door, that saves a BUNCH of time. On the first day of school, when I had to get dressed to take her in, I got up at 6:30.

  13. I wake up at the same time every day (4:30am) and have my ME time before the kids get up. I find that if I need extra time for the day to go smooth then I am better off staying up late. If I wake up any time after 6am I feel like my day is already half over so why bother doing anything...i know, it's just beginning...but that's not how i feel.

    There have been times I go to bed at 9pm and times that I go to bed at 11pm. Either way, as long as the kids are ready for school the night before, the day seems to run much smoother.

If I want to work out, I get up between 5 and 5:30 a.m. I get the kids up, dressed, and eating breakfast before I leave for work around 7:45 a.m. I shoot to go to bed by 10:30-ish, but I agree that you have to make sure kids' lunches are packed and ready to go the night before. Props to you for doing homeschool and teaching 9 credits!

  15. 5am. My reality is usually between 5:25 and 6am. But 5 am is ideal time. If my kids would just stop taking turns getting me up at night, I'd be fine:)

But, when my husband was teaching early-morning seminary, I got up at 4:00, and he got up at 4:30 (he had to leave at 5:20, ad at that time, my children would wake up at 5:20 all on their own). As crazy as 4 am sounds, things flowed REALLY smoothly then, and I got a TON of stuff done, even though I went to bed pretty early.
