And now, these treats will see you through all of your important events. They require less active prep time then a batch of cookies, but they have all the chewy appeal of a gooey chocolate chipper, plus a caramel- like richness from the brown sugar. They pack up perfectly, without any messy melted chocolate chips, and if you don't slice into them you can even make them a day ahead. Best of all, kids from one to 92, will find them inexpressably delicious. And that makes any kind of party a success.
Money Saving Tips:
This is one recipe that doesn't bake well in a half batch, so don't be tempted to halve it. You can freeze any extras, or better yet, wrap them up and take them to a neighbor or co-worker that could use a little pick me up. Leave out nuts on this one to make it more universally appealing at a party, plus it's cheaper that way. Look for butter on sale (or buy in bulk from a warehouse store) and be sure to stock up when you find it.
Chocolate Chip Cookie Bars
Estimated Cost: $4.00
1 cup butter, softened
1 and 3/4 cups brown sugar
1/4 cup granulate sugar
2 eggs
2 teaspoons vanilla
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups all purpose flour
1 and 1/2 cups chocolate chips
Preheat oven to 350 degrees. Lightly coat a 9 by 13 inch baking dish with no stick cooking spray. In a large bowl, cream butters and sugars until fluffy. Add eggs and vanilla, stirring well. Stir in powder, soda, and salt. Add flour and gently stir until just incorporated. Add chips and scrape batter into prepared pan. Bake for 38-42 minutes, or until top is golden brown. Let cool before slicing...if you can wait.

ReplyDeleteI (finally) got around to making the tamales you posted in December. Oh, how I love tamales. Yours really were easy, and SO DELICIOUS. I stuffed mine with imitation Cafe Rio pork, and impressed my family (especially my dad who loves all things Mexican food, and gets authentic tamales from work all the time). I even pawned some off on a brother-in-law, and he shoveled them down. So, thanks so much for your recipe. We will be having these again.
Not to be pushy, but you mentioned a tortilla recipe to use some of the corn flour. Any chance we could hear about that?

ReplyDeleteyummy! i wish i could have come to your graduation. we just had a little open house last night to which grandparents and an aunt an uncle came. the kids each recited a poem, sang 2 songs in russian plus another favorite song, and performed on the piano. we displayed some of their artwork and enjoyed treats (chocolate dipped strawberries and mini-cheesecakes with blackberries). it was fun and we are heading into more casual school days with a little bit of schoolwork and a lot more swimming!:) wish we could be together.

I thought about homeschooling, but then I decided that no one with ADD should homechool their kids. The world would not be a better place. So, the lovely public school across the street is blessed with their presence. :)
