Love Thy Neighbor...with Fudge

Here's the easiest way to express gratitude for those with whom you share a fence: in a word, fudge. And I've got the skinny on the easiest, silkiest, dreamiest fudge that you could ever whip up in five minutes. It's so easy, in fact, that my five year old made a batch for his Sunday school teachers. Other than pushing the buttons on the microwave, he was a lone, proud cowboy of candy making. Tomorrow we'll be back to Christmas Around the World. I think. In the meantime, I've been churning out cookies, candies, cakes, not to mention dinners galore, and I haven't really even shared them at all, thanks to this month's international Christmas crazy bonanza. But this one, dear readers, this one I just couldn't keep to myself. If you haven't made anything for your neighbors, your hairdresser, your spiritual advisor, your mailman, youre genealogist, your recently unemployed financial advisor....this is it. I'm off to rush around madly in circles with the rest of America. Just five more days till Christmas!

Easy Fudge
Estimated Cost: $5.00
Use your big bag of Costco chocolate chips and you'll save a fortune.
3 cups semi sweet chocolate chips
1 (14 ounce) can sweetened condensed milk
4 tablespoons butter
1 teaspoon vanilla
1 cup add ins-such as crushed peppermints, frozen marshmallows, chopped nuts, dried fruits, chopped cookies, etc...
Line a 8 by 8 inch square pan with foil. Place chips, milk and vanilla in microwaveable medium bowl. Zap for one minute. Stir. Repeat until chips and butter are melted. Stir with wooden spoon until shiny. Add vanilla and any optional add ins. Pour into prepared pan. Chill for at least two hours.
For White Oreo Fudge:
Follow above directions, using white chocolate chips and reducing butter to two tablespoons. Generously grease foil lined pan. Leave out vanilla and add 20 crushed oreos.
My Sailor-girl made chocolate fudge in mini loaf pans to give out to her music teachers. You can get 3-4 little fudge blocks. Wrapped in cellophane with a plastic knife, it doesn't get much cutie-patootier than that. Unless you want to put it in a polka dot ribbon-tied box. That's purdy too.

    first off, this fudge looks amazing. I hate to admit it, but at this point I am feeling a little burnt out with holiday goodies. Hard to believe, right? :) Anyway, this fudge looks completely doable and delicious. Perfect for the break, when my kids want to do something in the kitchen and for all those people who are now bringing things to us. This would be perfect.
    About the bread cubes- I just got the dried out bread cubes that we had leftover from our Thanksgiving stuffing and measured out 8 oz. on the kitchen scale. If I had to estimate, I would say it was probably 6-7 cups. I am not sure though. I am not the best at estimating things. Hope it works out! Let me know if it does. Have a great weekend~

  5. oh, prudy! this fudge looks wonderful. and i am on a constant quest for the right fudge recipe. i had really planned to skip it this year, but now that i've read this post i'm going to cave in and make some. i think i'll use mint m n m's, since your mnm fudge looks so colorful and festive.

    but, alas, i was banking on reading about your latkes and applesauce this morning. we have a jewish friend coming over for hanukkah dinner on monday and i knew i could count on you for the right recipe. i guess i'll have to look to epicurious for my advice. (i'll also be making your rugelach and some sufganiyot if the day goes well. why does hanukkah have to be so close to christmas????:)

  9. We owe Sailor a big thanks for her fudge tips. We gave them to all our teachers and neighbors this year, per her advice. They were great and we even had a few neighbors ASK for some. They were fun to make with kids except that we always had to count on eating one everytime we cooked some up. Merry Christmas!

  11. I need to learn how to make fudge. Since Im allergic to nuts, every. single. piece... that is sold in America seems to have some kind of legume pieces running through it (all independent of the fact that I live in the pecan/peanut covered part of America, called North Carolina LOL) Thanks for this. I'll try it....esp the Oreo one.

    It's peppermint bark. I didn't post about that but did include it in my neighbors box. You could easily make a double layer fudge with white and chocolate with peppermint on top. I think you're onto something! Peppermint Bark Fudge-look out Williams Sonoma!:)

    The boxes came from Wal-mart in the craft section. They're made by Martha Stewart. If I ever see them again, I'm buying the lot. My mom went back to get some and they were sold out. Wah!

  16. I have always been afraid to make fudge. It seemed difficult.... if your 5 year old can do it, I can do it too!

    Oh, I found some boxes like those at my local Michaels (craft store) They were probably a bit pricier though. They are very cute!

  21. Oh Prudy...I am running to Walmart to see if they have any of those boxes! After it stops snowing though...we're in a bit of a storm this weekend! I made a lot of fudge this year too-but I'd like to make some of that white oreos fudge one..maybe I'll brave the storm for some oreos to make it today!

It's good to know that the scrappy La Cima gang was able to produce some well shod and strapping young citizens with clean noses.
