Beefier than Taco Bell Nachos for Super Bowl Sunday

Have you been following the crazy law suit against Taco Bell? A consumer is calling for Taco Bell to be more honest about the actual percentage of beef they use in their tacos, burritos, and cheesy gordita crunch-a-ma-jigs. I don't know what they have on their menu. I haven't been there in years. Not since my sister Heidi bought a burrito on our drive from California to BYU and it dripped all over her cut-off sweats as she cruised the I-15. I was riding shotgun, trying to sop it all up with napkins and laughing my head off. I don't think that incident was Taco Bell's fault, but if you think it was, maybe I should consider a lawsuit. It has caused me considerable emotional distress and I haven't been able to step into a Taco Bell or wear cut-off sweats since then.
I think we're getting a little too big for our litigious britches, don't you? Here's what you do if you don't like what they're doing at Taco Bell, at Mc Donalds, at Acme Roller coaster company-you don't go. You don't spend your money there. You don't have to sue, get it? Your dollar is your vote. And aren't we forgetting the obvious here? Who goes to Taco Bell because they are expecting the finest quality Angus beef? Unless I've got America pegged all wrong, I think people are there for taste and price. Taco Bell, like any good housewife, stretches their budget by adding a little of this and a little of that to their ground beef. Didn't your Mom put oatmeal in her meatloaf? Beans in her chili? Breadcrumbs in her hamburger patties? That conniving little penny pincher! Take her to court and sue her for all she's worth! How dare you, Mom? Um...It sounds ridiculous, because it is ridiculous. Businesses, just like people, balance their budgets by making compromises here and there. If you don't like the extended beef at Taco Bell, take your discriminating dollar somewhere else. (Or make your own food at home; I'm here to help.) I'm pretty certain you'll be paying more, but maybe you'll be so busy eating you can keep your litigious mouth shut.
That sounded a little harsh. Let me try that last line again. Maybe you'll be so busy eating, you can keep your litigious mouth closed. Was that nicer? Oh, good. This is nicest of all: I've got some big, beefy nachos for your Super Bowl Sunday. They're loaded with shredded beef, melted cheddar, sour cream and homemade super-fast salsa. Get a pot roast going sometime this week so you'll have plenty for nachos this weekend. And if you're too busy to cook, you can always go to Taco Bell. No suing though, OK?
Pot Roast for Mexican Recipes
Estimated Cost: $8.00 for lots
Any inexpensive roast will work well, since you're going to be simmering for a long time.
1 pot roast, about 3 lbs.
1 onion, sliced
3 cloves garlic, whole
1 cup smooth salsa
1 cup beef broth
Put everything in the crockpot on high for 4 hours, or on low for 6-8. Mash up the onion and garlic with the juices. You can also do it on the stove top; just brown the roast in a little oil, add all the ingredients and simmer until tender about 3 hours.
Quick Salsa
Estimated Cost $1.00 for about 2 cups
1 (14 ounce) can Mexican style diced tomatoes with jalapenos
juice of 1/2 lime
pinch of sea salt
1/3 cup chopped onion
1 clove minced garlic
Combine all ingredients in blender and process to smooth, or leave it a little chunky.
Nachos:
Layer tortilla chips, refried beans, shredded beef, and shredded cheddar cheese. Bake at 350 until cheese is melted. Top with sour cream, salsa, and chopped scallions and tomatoes.

Next Up: More Super Bowl food. Or Chinese New Year. Still thinking...

PS I might go to Taco Bell one of these days, just to show my support.

One of my husband's co-workers was discussing this and she said "Come on, who goes to Taco Bell anyway? Isn't it just food for when people need to eat something after drinking till all hours?" My husband, who has never had a drink in his life, LOVES Taco Bell. And yeah, we go there because it's cheap and has some semblance of vegetables.

This is a tough one for me. I see your point but I also dislike the fact that as consumers we're often so misled. I agree that most people who go to Taco Bell really just want some tasty tacos and likely aren't too concerned about high quality. I rarely go, but when I do it's usually because I'm in the mood for some junk and I'm willing to go there. Still, it would be nice if I knew ahead of time exactly what was in it - if it is, in fact, something other than total beef. I'm curious to see what comes out of the lawsuit!

The ingredient lists aren't pretty, but hey-it's good info for the consumer, right? Hope you and your family are doing well!

yes i stretch my meat with bread, or oats but only 36% meat is a little much for me, but then again I only eat bean burritos if I go there anyways, at least I think that it's all beans!

Funny post and Yum! Looks like a good recipe to try. I made your creamy potato soup and my husband dubbed it the best thing I've made since we got married (in 1990). I don't know if that means I'm a terrible cook or he was super hungry but the soup was FAB. I made it with red potatoes and left the skins on. It looks like dirty dish water until you add the roux :) Glorious soup!

Cheap Taco Bell tacos and burritos kept me alive for an entire semester of college, but I got so sick of them I haven't eaten their sense. I agree it's ridiculous to sue a company, because YOU decided to use their product. A little common sense can go a very long way!

Those nachos look great! I hardly ever make nachos.

Taco Bell is awesome. Baja chicken gorditas! I don't usually order beef items. Eric doesn't have a problem with them, though.

I'll have to look up what the "filler" was in the beef. Was it soy or something? I never thought the meat was really high quality before this story came out. Haha.

I have always wondered how anyone in their right mind could eat meat from a fast food establishment! In n Out burger is the only ff meat that I will even touch. If I absolutely must have something from a place like that, I go for a bean burrito, a baked potato, a salad, or a twist cone:) I know I'm a food snob, but ground beef from anywhere like that has always been suspicious to me. I'm all for suing them if they are lacing it with arsenic, but if it's just low quality beef with some fillers in it-- duh! There are people out there who just look for ways to make money in suing big business.

I'm with you, that we make a difference by not buying their food.

These nachos look heavenly. Have you ever tried the CL recipe from a few years back for "beef carnitas"? I know it is a strange name, since carnitas should always be pork, but it is so amazing that whenever I make it, I almost always turn around and make it again the same week because we loved it so much. It's a great shredded beef. And this looks divine as well.

no i haven't been following that lawsuit. to be honest i don't trust any fast food meat. they have such low meat grades, i get scared.
i do like taco bell, i get the chalupa with beans, no meat and extra cheese. they are good. and seeing this post of yours reminde me i want to recreate the chalupa at home, love that crunch.

I like Taco Bell on ocassion and I have never thought that for the change in my couch cushions I was getting top of the line beef. I had a friend who worked there in college and told me there beef was a white powdery substance that they mix with water to rehydrate. I don't mind people wanting to know what they are eating, but trying to make a buck over every little thing is getting pretty annoying.

Your nachos look good, no matter what's in that meat. We are superstitious about eating nachos on gameday so maybe I will make some. Although, I may need to stick with my usual queso dip nachos, because what if those are the only ones that do the trick. Seth tells me nothing that I say, do, or wear has any effect on outcome of the game, but I can't help my superstition. You are rooting for the Packers, right? I hope so!
