Tuesdays with Dorie: Butterscotch Pudding

If you think you don't like Buttterscotch Pudding..... you might be dead wrong. At least I was. I was about as excited to make butterscotch pudding this week as I am for my monthly credit card bill. But I was dead wrong. (Not about the bill; oh, mama.) Leave it to Dorie Greenspan to make a butterscotchy believer out of me. This decadent pudding is warm and buttery, with brown sugar and caramel undertones and a luscious creamy texture. Take it from me and plan to serve this one in front of the fire place-warm, with a dollop of whipped cream and sugared pecans. Here's your link to silky-warm-you -to-your-toes goodness. It's so yummy it'll make you forget all about that credit card bill that I mentioned earlier. Forget I mentioned it. For my fellow penny-pinchers, the estimated cost is $2.00 for a half batch, if you make it my way, which is scotch-less. I also didn't use a food processor, like Dorie recommends. Lazy dishwasher me. The wire whisk works wonders. How's that alliteration for you?
And in the meantime, I've been baking loads of chocolate chip cookies and then popping those Nestle swirly chips on the top when they just come out of the oven. Colored M and Ms work well, too.They're the best for parties that include kids of all ages, from one to ninety-two. Speaking of ninety-two, that's about how many I almost ate. And I betcha Santa Claus might like his own little set of ninety-two tomorrow night.

I ruined mine by adding scotch to it. Silly me. I know from the pre-scotch smell alone that I would have been right there with you singing the praises of the butterscotch pudding to the high heavens if not for the scotch. So sure am I of this, that I might actually make this again someday (sans scotch, of course!) Your cookies look wonderful too -- do I have it in me to make one more batch of cookies? Okay, yup, I do. I can't wait to try this pudding; we love puddings, and although most butterscotch flavored sweets are too cloyingly sweet for me, I'm betting Dorie doesn't do that to us. The big Q = scotch? or no scotch??

And I'd love one of those cookies (or 92) for breakfast! So festive.

I like your top photo--what a pretty cup. I had a hard time coming up with a good way to photograph this week's recipe. Butterscotch pudding is rather... beige. =) I'm with you--no need to wash the food processor when a whisk works well.

I didn't have the time or excitement in me to make this one. But, if you loved it, I might have to backtrack. I can't wait to see your breakfast strata- I am heading over there right now.

The Strata totally reminds me of "The Family Stone". Haven't seen it? You should. Absolutely one of the funniest movies I've ever watched. And it's on TV a lot which is a bonus. I'm certain yours turns out better than Sarah Jessica Parkers.

I love love love butterscotch anything, without the scotch. I created a recipe for butterscotch pie filling, which also translated into pudding, this summer, and my dearly beloved can't get enough of it! Merry Christmas, Erin!

I really wanted to try the breakfast strata, but Mark does not fancy salsa at all! Is there a substitution that would still taste good?

If not, I usually just ask him to try it anyway, and normally he will gobble it right up! : )

Absolutely! Change the salsa for milk and double your green chilies. I make another version with swiss and cheddar cheese, sliced green onions and about 1 tablespoon dijon mustard with the milk-it's also really yummy.

I love pudding. Tapioca is my favorite but I might have to make some of that butterscotch -- it looks scrumptious! Those cookies are very cute. I am off to make cookies with my kids now so Santa can have a few tomorrow night when he come!

yeah...anyone who thinks they don't like butterscotch pudding has probably only tried the jello version. frankly, it doesn't even deserve the name. :)
