BLTs with Garlic and Olive Oil Avocado

How can it really be August already??? I'm not ready for freshly sharpened pencils and new backpacks yet....

I have nothing against mayonnaise on a BLT. In fact, I may be Best Food's (Hellman's East of the Rockies) greatest customer, excepting of course, for my mayonnaise-loving Pop. But last Saturday afternoon, I spied a perfectly buttery, 100% natural, and very innocent avocado on my counter. It may seem counter intuitive to try to use healthy fats on a bacon sandwich, but I'm always of the theory that every little bit of good sense counts. Still, I have other reasons besides health for choosing avocados. Buttery, rich, and sensuous, their flavor alone is enough of a recommendation, especially mixed with some pungent garlic and fruity olive oil. It's ridiculousy delicious despite its simplicity. You may never want mayo on your BLTs again.
P.S. In a fit of Saturday afternoon indolence, I made the bacon in the microwave on paper towels. It's not quite as good as pan-fried, but the difference is minimal on a sandwich.
BLTs with Garlic and Olive Oil Avocado
Estimated Cost: $4.00
Notes: Use your best red ripe tomatoes here.
1 large avocado
1 cloves garlic, minced
1 tablespoon fruity olive oil
2 crusty whole wheat rolls (I use padhinas from Albertson's)
4-6 slices of cooked crisp bacon
2 red ripe tomatoes, thinly sliced
lettuce, arugula, or spinach leaves
In a small bowl, mash together avocado, garlic, and olive oil to form a smooth paste. Season to taste with salt and pepper. Spread on bottoms of rolls and top with bacon, tomatoes, and lettuce.

I've been eating tomatoes so much lately and I still can't get enough of them. I've never tried them with Avacado. The pictures of your sandwich look amazing.

This looks like a sandwich my husband would salivate all over before devouring. Me, too, actually. YUM! I will definitely need to try this.

Tillamook cheddar is the only kind of cheddar we buy in our house. We get the blocks of it at Costco and my husband shreds it. Good thing, too, because I can't fit my hand around the end of the loaf to actually do any damage when I shred it.

Yup - definitely a great idea. I love mayo - but, miracle whip is the best - I buy the light kind. But this is totally something I'd make. Totally!

Oh, Prudy! That looks so good. I love avocado. Thanks to you, I'm getting lots of it- in the form of guacamole lately. Have you ever cooked bacon in the oven? I just lay it out on a foil-lined cookie sheet, throw it in at 375 and it's done in 10-15 minutes- perfectly cooked. Hope you have a great weekend!

Out of bacon, no avocado in sight and only a photo to drool over. Did make a batch of homemade french bread, but all we have is butter to eat it with it. Is there a substitute in the cupboard for any of those delicious items depicted on your blog? Signed, old mother hubbard

I have been loving BLTs lately, with fresh tomato and greens from our garden. This is very similar to one of my favorite sandwiches at Red Robin - the BLTA. :drool:

Ohh Erin that sandwich looks heavenly. I am trying hard to cut down on carbs, but I may have to splurge and dig into one of these! You have all of my favourite things in here. Bacon and Avocado go so very well together! BLISS!

BLT is my favourite all time sandwich. Im like you, microwave bacon when time is short!! I've had a chicken, bacon and avacado sandwich before and that was delicious, just like this one I'm sure! Yum
